Pi Day 2026: Giant Chinese egg tart. Egg-based custards tend to overcook easily and curdle, so we prepared a starch-based custard because starches slow protein coagulation by blocking protein molecules from bonding during cooking. Next time, I'll use more heavy cream to facilitate carmelization of the surface.

Valentine's Day 2026: Double-seared, sous vide tenderloins with rose petals and a red wine and dark chocolate compound butter. Rochers still present a challenge but are a work in progress. Otherwise, this is a bulletproof date night go-to.

2 dozen semi-sweet chocolate-covered strawberries with various toppings, including pistachios, macademia nut, buzz button + chili, cacao nibs, rose petals.

This oshogatsu, my House and some friends prepared osechi, comprising daidai, kagami mochi, ikura, kamaboko, yellowtail teriyaki, shishito peppers, butter hotate, datemaki, kobumaki, kuri, tazukuri, namasu, kuromame, kazunoko, ebi no umani, kikka kabu, su renkon, tataki gobo, nishime, ozoni, unagi chirashi, and raindrop cakes. Thanksgiving 2025: Cran-pari negroni sbagliato, sous vide turkey, orange and pistachio cranberry sauce, leek and shiitake jasmine rice bread stuffing, mashed potatoes, turkey jus gras, green bean casserole chaat w/ tamarind and cilantro mint chutneys, apple and mustard brussels sprouts slaw, pumpkin-style corn pie, raspberry and blackberry pie. 👇
